- 1 Avocado
- 75g Dark brown sugar
- 60g Cocoa powderplus extra to dust (optional)
- 150g Ground almonds
- 100ml Maple syrup
- 60g Peanut butter
- 1tsp Vanilla extract
- 1 Large eggsbeaten
Preheat the oven to 180C/160C Fan/Gas 4. Line a rectangular tin with baking paper.
Scoop the flesh out of the avocado, discarding the skin and stone. Mash or blend the flesh until smooth.
Mix the avocado with all the other ingredients until well combined. Pour into the baking tray, smooth the top and bake for 30 mins or until a knife inserted into the middle comes out clean.
Leave to cool, cut into 18 squares and sprinkle with cocoa powder (optional).
